Zucchini Stuffing Bake



Okay way too many zucchini are staring me in the face! Corn bread mix makes this one bowl recipe extra easy and extra tasty. A summertime stuffing great for brunch, lunch or dinner.


1 large or 2 small zucchini, grated (about 4 cups)
1/2 sweet onion, minced
1 small hot or sweet pepper, sliced thin (optional)
1 tomato, seeded and sliced thin (optional)
1 (8.5 ounce) package corn bread mix
3/4 cup grated parmesan cheese
1 cup cheddar cheese, grated
4 eggs (or egg substitute)
2 tablespoons melted butter
1/2 teaspoon salt
Pinch of black pepper
1/2 teaspoon poultry seasonings
1/2 cup crushed crackers or breadcrumbs for topping (optional)

                                                                                                         Preheat oven to 365ºF

1.  Mix all ingredients in a large bowl and pour into an                             8"x8" greased baking pan.
2.  Top with crumbs if desired and bake for 40-45 minutes.
