Berry Coulis

Berry Coulis- Pure, simple and delicious. Make it special and add a burst of color and flavor to plated desserts, cakes, ice cream, chilled soups and beverages. 


1 pint of raspberries, or other berries
3 tablespoons sugar
2 tablespoons honey
pinch kosher or sea salt

1. Place the berries and sugar in a small container and mash, let the mixture rest for 15 minutes. Strain the berries and discard the seeds. Whisk in the honey until smooth, add salt and chill until ready to serve.
