Caramelized Cayenne Pecans / Walnuts- A party favorite that ends with just the right kick.
2 tablespoons sugar
2 tablespoons brown sugar
1 tablespoon maple syrup or corn syrup
1 tablespoon butter
1 cup pecan or walnut halves
1/4 teaspoon ground cayenne pepper
1/2 teaspoon kosher or sea salt
1. In a deep sauté or skillet pan heat the sugar, brown sugar and maple syrup until the sugars are dissolved.
2. Add the nuts and continue to cook until the syrupy mixture starts to turns a deeper amber color being careful not to burn.
3. Remove from heat add butter, cayenne pepper and salt, mix to coat pecans evenly, pour onto parchment paper or silicone mat and separate nut pieces.
Note: Sprinkle the caramelized pecans / walnuts with additional cayenne pepper for more heat, if desired.
