Hands down this is our favorite pecan cookie. Caramelized with honey, a smidgeon of molasses and cream makes these extra special. Serve at your finest occasions.
12 Tablespoons butter
1/4 cup sugar
2 cups all purpose flour
1/2 tsp kosher salt
1 1/2 sticks unsalted butter
1/2 cup honey
1 tsp molasses
1 1/2 cups dark brown sugar
1/4 tsp kosher salt
3 cups pecans
1/4 cup heavy cream
Preheat oven to 375º F.
1. Pulse all crust ingredients in a food processor until it forms a loose ball, or cut in by hand. Press the dough into a parchment lined 9”x13” baking pan. Pre-bake in oven for10 minutes.
2. In the meantime-make the filling: heat the sugar, butter, honey and molasses in a saucepan over medium heat until the sugar dissolves. Bring to a boil and add pecans and heavy cream, the mixture will boil.
3. Pour pecan mixture over pastry and bake for approximately 25 minutes or until you have the filling is golden brown and bubbly.
Cool completely. Cut into even 1 1/2 “ squares.
