Man Oh Man- Chicken Wings and Sauce

Be prepared to be asked for this recipe.  It is a favorite and we are often asked to bring "the wings" to many gatherings. Crunchy and meaty with just the right amount of finger licking spice. The sauce is really, really good and can be used for grilled meats too!


                                                                                                   Preheat the oven to 450ºF

Chicken Wing Ingredients:

5 lbs. chicken wings

1/4 cup vegetable oil

2 tablespoons sugar

2 tablespoons smoked meat rub

2 tablespoons seasoned salt, see Dash of This and That Seasoned Salt

Wing Sauce Ingredients:

8 tablespoons butter (1 stick)

28 ounces barbecue sauce

Juice of one fresh lime

3 tablespoons vinegar

3 cloves fresh garlic, chopped

1/2 cup terriyaki sauce

4 tablespoons hot sauce

1/4 tablespoon cayenne pepper

1 tablespoon cumin

1/2 cup brown sugar

3 tablespoons curry

2 tablespoons honey

1.  Mix all the "Chicken Wing Ingredients" together and bake until the wings start to brown, turning occasionally.

2.  In the meantime prepare the sauce: Mix all "Wing Sauce" ingredients in a saucepan and place over a medium/low heat.  Bring the mixture to a boil and then simmer for 4 minutes.

3.  Combine the cooked wings with the wing sauce- return to the oven and continue to bake for approximately 20 minutes  or until the edges are nice and browned.



The chicken wings may be fried- just add 3/4 cup of corn meal to the "Chicken Wing" ingredients above before frying. Then proceed with steps 2 and 3.

Serve with minced cilantro and lime wedges.
