Okay I admit it, I usually do not like to use the microwave, but when I have a chocolate craving and need something on the spot this is my go to recipe. It has no eggs or chocolate chips, so it is lower in cholesterol than some other mug cakes. This "tablespoons and teaspoons" recipe seems to be just the right size with some (low fat) whipped cream and chocolate syrup. I sit somewhere uninterrupted and savor every decadent lower fat bite of - me time.
1 tablespoon cocoa
1 tablespoon brown sugar (heaping)
1/2 teaspoon sugar
1 tablespoon flour
1 tablespoon skim milk
1/4 teaspoon vanilla extract or strong coffee
1/4 teaspoon kosher salt
1/2 tsp light sour cream
1/2 teaspoon vegetable oil
1. Place all ingredients in the order listed into a small ceramic mug.
2. Mix just until incorporated and microwave for 27 seconds.
If desired top with (low fat) whipped cream and chocolate syrup.
