Mustard and pickle relish harmonize the fresh vegetable flavors in this salad. This is wonderfully colorful, sweet, tangy and crunchy.
Salad Dressing Ingredients:
1 tablespoon mustard
2 tablespoons pickle relish
1 tablespoon fresh parsley
3 tablespoons of sugar (or less if desired)
3 tablespoons red wine vinegar or lime juice
1/4 cup vegetable oil
2 teaspoons kosher salt
pinch of black pepper
1 small red cabbage (or 1/2 large red cabbage)
1 yellow, red or orange pepper sliced thin
1 scallion sliced thin
1/2 cup chopped celery or cucumber
1. Prepare the salad dressing: Place all “Salad Dressing Ingredients" in a jar and shake, or blend in a small processor.
2. Place all vegetables in a serving bowl and toss with the salad dressing.
3. Refrigerate for at least 30 minutes.
