Greek Lamb or Chicken Souvlaki

Marinating the meat makes it extra tender and extra tangy. For an even easier preparation- forget the skewers and broil in the oven. This homemade version just might spoil you.

Ingredients:
2 pounds lamb or chicken breast trimmed and cut into approximately 1/1/2 “ squares
1 cup plain greek yogurt
4 cloves garlic
2 tablespoons fresh mint, minced
2 tablespoons fresh parsley and/or cilantro, minced
2 tablespoons dried oregano
3 tablespoons olive oil

Juice of 1/2 lemon
1 teaspoon grated lemon zest
1 tablespoon ketchup
1 tablespoon salt
1/2 teaspoon black pepper

1. Mix all ingredients in a large well sealed plastic bag or bowl, marinate for 6 hours or more, (overnight is even better).

2. Thread meat onto skewers and grill for about 12-18 minutes (depending on meat and size) turning meat half way and browning on all sides.

Serve on warmed pita or naan bread with tzatziki sauce, tomatoes, lettuce and fresh, or grilled skewered onions.
