Do yourself a favor, Instead of purchasing or taking up valuable space with a pressure cooker, slow cooker and/or food warmer- get a Multi-Cooker. It pressure cooks, slow cooks, sautés, steams and warm foods. I have already made butternut ginger soup, black bean soup, and pulled pork several times, but for now I must share a favorite Red and Black Bean Soup.photo 4

I can not explain it but the pot seems to encapsulate flavoring- especially that of fresh herbs. These pots make a great gift and are wonderful for almost everyone, especially those who are health conscious, work, entertain, need extra cooking sources, etc.  After some research I purchased the Instant Pot because it is made of good quality stainless steel inside and out, steering away from the potential hazards of non- stick cooking surfaces. It is so easy to use.  

 

 

 

Multi-flavored and delightful, this pungent Lemongrass Thai Soup is sure to impress. Don't let the amount of ingredients intimidate you, it all comes together fairly quick. Grilling the Shrimp instead of boiling adds an extra level of goodness. Serve alone for a satisfying light meal.

Make it festive with sparkling cider and a make-ahead pumpkin shaped cheese ball. Assorted warm nuts, sliced pears and fennel make it a snap to serve.
