3 large red bell peppers roasted (see link) and patted dry or 1 (15 oz) jar roasted peppers (drained and patted dry)
1/2 clove garlic
2 tablespoons extra-virgin olive oil
1 tablespoon fresh parsley
1 tablespoon raisins
1/2 cup lightly toasted walnuts
1/4 cup lightly toasted pignoli
1/2 teaspoon cumin
1/2 teaspoon paprika
2 teaspoons balsamic vinegar
1. Whip all ingredients in a food processor until smooth , taste and adjust seasonings.
This is best served with fresh or toasted pitas.
