Lemon Mousse Parfait











This is such an impressive and easy to make dessert. Using fruits in season will heighten the flavor. Blueberries are my favorite. Mouth watering layers of lemon mousse, fresh fruit and a crunchy topping. Use your fanciest stemmed glasses and show it off!


1 1/2 cups heavy cream
1 cup sugar, divided in half
1( 8 ounce) package of cream cheese, softened
6 tablespoons Fresh lemon juice
Grated zest of 1/2 lemon
1 teaspoon vanilla or lemon extract
4 tablespoons confectioner’s sugar

Fresh seasonal fruit
Amaretti or shortbread cookies, crumbled


1. Beat heavy cream until just foamy and gradually beat in 1/2 cup sugar until peaks form and set aside.
2. Beat the cream cheese until it is creamy and no lumps show, then whip in 1/2 cup of sugar, lemon juice, lemon zest and extract until smooth.
3. Add confectioner’s sugar to cream cheese mixture mix well and then incorporate the whipped cream.
4. Chill in serving bowl or cups. Layer with macerated fruit steeped in simple syrup or liqueurs
such as Limoncello, Amaretto, Grand Mariner (Orangcello) etc. and top with crumbled shortbread or amaretti cookies.

Be creative, this should keep for 2 days. Delicious!
