Orange Cranberry Muffins



I just had to jot down this “impromptu” recipe
for you. I thought before I sit at my computer
and get started I need a pick me up breakfast.
Orange Marmalade, cranberries and a hint of
oatmeal whirled into muffin batter were just
right thing. I confess I ate two.

3 cups flour
1/2 cup oatmeal (quick cooking or old fashioned)
1 1/2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
3/4 cup orange marmalade
1/3 cup dried cranberries
2 large eggs (room temperature)
1/3 cup orange juice
1/2 cup sour cream
1/2 cup vegetable oil
2 tablespoons melted butter or margarine
A pinch of grated nutmeg
1 teaspoon ground cinnamon (optional)

                                                                                                 Preheat oven to 375º F

1. Combine first 6 ingredients in a large bowl. Sift baking soda and baking powder to remove any lumps. Set aside.
2. Mix the remaining ingredients together and then add to the dry mixture, only until just combined.
Do not over mix.
3. Bake in lined muffin tins for 20 minutes.

Note: 1/2 cup chopped nuts, 1/4 cup coconut flakes would be fine additions.
