Christmas would not be the same without Shrimp Melts. This is an all-time favorite and most often requested recipe. My mother-in-law Nancy came up with this recipe many many years ago and she has been making it ever since. Mouth watering tangy shrimp and hot bubbly cheese served on party sized breads, hard to resist.
1 lb. raw peeled shrimp, chopped in bite sized pieces
3/4 cup mayonnaise
3 tablespoons red onion grated
1 cup shredded cheddar cheese
1/2 cup shredded monterey jack cheese
1 teaspoon fresh lemon juice
1 package of rye or pumpernickel cocktail breads (usually found in deli)
Preheat oven to 400º F
1. Combine first 6 ingredients and spread on cocktail bread slices.
2. Bake for 10-14 minutes or until bubbly and golden at edges.
