Staring at a fresh pineapple on my counter, I made this on a whim. It is a refreshing starter salad and each of the ingredients tickles the tongue and plays off of each other oh too well !! My sister Fran finds this addicting.
One fresh pineapple, sliced and diced
4-5 fresh mint leaves, minced (reserve a sprig for garnish if desired)
1/4 cup ginger syrup * see recipe*
1. Combine all three ingredients.
2. Place in a serving bowl and garnish with a sprig of mint.
Ready to serve as is or chill for a few hours.
