4-6 medium sized beets, scrubbed well with tops removed
2 tablespoons olive oil
1 teaspoon salt
Sprig of fresh rosemary (optional)
Preheat oven to 375º F
1. Coat the beets with olive oil and salt (add rosemary if desired), place in a covered baking dish, or if you prefer- wrap completely in aluminum foil, fold all seams and place into a baking pan.
2. Bake for one hour, more or less depending on beet size. Check for doneness by inserting a cake tester or fork into the beet- it should slide in smoothly. Return to oven if necessary checking for doneness every 15 minutes.
4. Peel and slice.
