This mimics my mother-in-law’s Shrimp Melt recipe and was concocted for friends and family that have allergies to shrimp. Delicious party sized treats of apples, bacon and bubbly cheeses. Oh yes this is another often requested recipe. Ingredients:
diced fine (skin removed)
1/4 cup dried cranberries chopped
6 slices bacon, fried crisp and crumbled
1 cup shredded cheddar cheese
1/4 cup crumbled blue cheese (substitute swiss cheese or any favorite cheese)
3 tablespoons red onion, minced or grated
1 teaspoon fresh lemon juice
3/4 cup mayonnaise
1 package of cocktail rye or pumpernickel bread (slightly toasted)
Preheat oven to 400º F.
1. Combine first 8 ingredients and spread evenly onto cocktail breads.
2. Bake for 10-12 minutes or until bubbly and golden at edges.
