Apple Bacon Blue Cheese Melts

This mimics my mother-in-law’s Shrimp Melt recipe and was concocted for friends and family that have allergies to shrimp. Delicious party sized treats of apples, bacon and bubbly cheeses. 3 apples
diced fine (skin removed)
1/4 cup dried cranberries chopped
6 slices bacon, fried crisp and crumbled
1 cup shredded cheddar cheese
1/4 cup crumbled blue cheese (substitute swiss cheese or any favorite cheese)
3 tablespoons red onion, minced or grated
1 teaspoon fresh lemon juice
3/4 cup mayonnaise
1 package of cocktail rye or pumpernickel bread (slightly toasted)

                                                                                                 Preheat oven to 400º F.

1. Combine first 8 ingredients and spread evenly onto cocktail breads.
2. Bake for 10-12 minutes or until bubbly and golden at edges.
