Beet flavor is accentuated by using a roasting method. Ginger and Mint really add punch to this colorful salad.
6 small sliced roasted beets
2 tablespoons sliced red onion
2 tablespoon olive oil
1/4 cup red wine vinegar
1/4 teaspoon dried mustard
2 teaspoons sugar
1 teaspoon grated fresh ginger
Salt to taste
Approximately 1 tablespoon of fresh mint chiffonade
Crumbled goat cheese (optional)
1. Prepare the dressing- place olive oil, vinegar, mustard, sugar, and ginger in a jar and shake vigorously.
2. In a bowl combine the beets and dressing, chill for 1 hour. Toss occasionally.
Taste and adjust seasonings.
3. Top with fresh mint and goat cheese (optional)
